What's For Dinner GF - Smoked Sausage and Navy Beans


It's time for What's for Dinner Wednesday Gluten-Free Style. This is a weekly GF-recipe swapping meme hosted by Linda at The Gluten Free Homemaker. Click the link and play along! Tonight we will have a quick but yummy dinner of Smoked Sausage and Navy Beans. The side dish will be fresh green beans from the garden...yes, more beans. But they are fresh and tender and I can't resist them!



Smoked Sausage and Navy Beans

1 lb Smoked Sausage (I use turkey) sliced into bite size medallions
1 Medium Yellow onion
2 (16oz) cans Navy Beans slightly drained

Throw the sausage medallions and onion into a hot oiled pan and saute over medium heat until the sausage is well done and the onions are caramelized. Add the beans and heat through. If the dish is too dry feel free to add a little chicken broth or water.

Green Beans

3 large handfuls of fresh snapped green beans
2 tsp oil of choice ( I use olive)
1/2 cup water
2 Tbls minced garlic (more or less , use what you like)
Pinch of kosher salt

Saute the beans in oil over medium heat for 3 minutes, add water and cover. Steam, stirring occasionally, until crisp-tender. Toss in the garlic and salt. Saute for 2 minutes more.

YUM!

Oh, we love sausage and we love beans. I haven't put them together, though, but this sounds great.
